Cake Mix cookies

A friend of mine at work was telling me about these cookies that her mom makes.
Her mom is a professional cake decorator and she deals with cakes all the time.
She makes cookies out a cake mix.
Any cake mix.
All you have to have is a cake mix and 3 eggs.
And some sugar.
She also said that they were good.
So, I thought I'd try it out!
And she was right.
I tried yellow and chocolate.
I did prefer the yellow ones more...
but they were so easy, you could easily do BOTH!

CAKE MIX COOKIES

1 box cake mix
3 eggs
sugar
*cinnamon

Preheat oven to 350*

Using a hand mixer, mix cake and eggs.
Using a scoop (as always!) form cake mix into a ball.
The cake mix will be sticky, but it's ok.

For the yellow cake, I mixed 3/4 cup sugar and 2 tbsp cinnamon.
Roll the cake mix balls into the cinnamon sugar mixture.

Place cake mix dough on a cookies sheet.
Bake for 10 minutes.

When they come out of the oven, they are so light and fluffy!

Unfortunately, they do flatten, but the flavor is still there!
These kinda had a snickerdoodle flavor.
And they were so soft!

So...I thought i'd give it another shot with the chocolate cake mix.
I did it the same way, with the cake mix and 3 eggs.

I formed them into balls with my scoop again.
I rolled them in just plain sugar.
Placed them on a cookie sheet
and baked them for 10 minutes.

I don't know if it was because these were chocolate, but it seemed
like they were cooked too long. They were still good, just not as soft
and moist as the yellow cake mix cookies.
I would probably cook them for 8-9 minutes instead.
If you are in a need for a quick cookie,
these are definately your *go to* cookie for quick.

  1. I had a roommate who made these all the time! We had fun changing them up with different cake mixes and "mix-ins" (chocolate chips, M&Ms, butterscotch chips, etc.) So easy too! Thanks for the reminder - and yours look great!
