Lemon Cake

This little cake was given to me before christmas as a neighbor gift.
Remember my Pampered Chef friend....well, it was from her.
I had a little bit of it and then I decided to not share any with my husband!
(I'm mean...I know!)
It was so good...
but I was feeling guilty for not sharing.
So, I decided to get the recipe and make my own cake!
We had it on Christmas Eve at my mom & dad's house!
Lemon Cake
1 pkg white cake mix
1 small box instant lemon pudding
3/4 cup oil
3 eggs
1 cup sprite
(yes, you read that correctly!)
Preheat oven to 350*
In a large bowl, combine all ingredients and mix with a mixer.
Pour into a greased bunt cake pan.
Bake for 40 minutes.
After it has cooled for a bit, turn it out onto the serving plate.
Mix 1 cup powdered sugar and 2 tbsp lemon juice.
(Maybe start with 1 tbsp and then taste it... I thought mine was too lemon-y)
(however...still VERY good!)
Drizle over the cake....a very liberal drizzle.
So good, and SO moist!

  2. I LOVE TO MAKE A LEMON CAKE WITH 1 LEMON CAKE MIX AND 1 CAN OF ORANGE SODA! THEN FROST WITH LEMON FROSTING- IT IS SO MOIST AND YUMMY.

  6. YUMMY!! MADE IT TODAY AND ALSO TRIED IT FROM MY COUSIN FIRST!! IT GOES QUICK!! SPRITE ZERO WE USED AND EXACTLY 40 MINUTES IN OUR OVEN WAS PERFECTLY MOIST!! 5*

  7. Would using a yellow cake mix change the taste significantly? It's the only mix I have on hand.

    1. I've used yellow cake mix and vanilla pudding, sprite or 7-up and it turns out PERFECT every single time!

  9. Can I use the cook & serve pudding vs. the instant pudding mix? Does it have to be Sprite Zero or will regular Sprite work?

    1. That's what I just did and I loved it, it works just fine! I also added some lemon zest for the texture and the result is AMAZING definetly a keeper!

    2. Made this for Christmas Eve & everyone thought it delicious! Nice and light, plus moist!

      I used 2 round 9" cake pans & cooked @ 350 for ~22 minutes.

  11. I made this cake for one of my desserts at Christmas and it was incredibly good! So light, so moist, so flavorful - making it perhaps the best dessert I've ever made!

    Things I did a bit differently were: used a yellow cake mix (Betty Crocker Super Moist); 2 round 9" cake pans; added some lemon zest, and made a lemon cream cheese frosting instead of the drizzle.

  12. Does this 2010 recipe use previous standard 18.25 oz boxed cake mix or (sad to say)today's(2018)manufacturer's revised 15.25 oz?
