Chocolate Zucchini? ..oh wait, Brownies, that's better!



Zucchini...really? and chocolate? How? What? All I have to say is mmmmmm....


Doesn't that look DELICIOUS? Well, it is!!!


Cream together

3 eggs
2 cups sugar
1 cup oil
1 tbsp vanilla

In a seperate bowl, sift together
2 1/2 c. flour
1/4 c. baking cocoa
1 tsp. baking soda
1/4 tsp. baking powder
1 tsp. salt

Alternating
1/2 cup milk
and dry ingredients,
combine with sugar/egg mixture.

Stir in 2 c. zucchini, peeled and grated.

Pour onto greased jelly roll pan and bake at 350* for 25-30 minutes.

While cooking, prepare frosting.

1/3 c. *softened* butter
1/4 c. baking cocoa
1 lb powdered sugar
1 tbsp. vanilla
approx 6 tbsp milk

Combine and set aside until brownies come out of oven. Let brownies sit for about 2-3 minutes.
Add frosting to brownies and let frosting *melt* into brownies before spreading...it will tear the brownies.
